Is it an easy task to replace this thermostat,and will it cure my fault which is only works on fast freeze making everything solid even soft scoop icecream. I am a retired electrician with limited movement.

From your description it suggests a faulty thermostat. The video attached shows the process for replacement though it may differ slightly depending on make and model number.
